Skillet Apple Crisp For Two

 

Skillet Apple Crisp


This Skillet Apple Crisp for two is quick and easy, low in sugar, and has no flour. I use oats mixed with a bit of brown sugar and stevia, and some butter and cinnamon. peeling the apples is optional. I made up the recipe in my head so you may change it however you prefer. 

My Ingredients 

1 large or 2 small apples cored Any kind of apple. Peeling is optional.

1 Tablespoon of butter and 1 Tablespoon of olive oil for sauteed apples

2 Tablespoons of butter melted for oats

1/4 teaspoon of cinnamon for apples

1/4 teaspoon of cinnamon for oats

!/2 cups organic old fashion oats

1 Tablespoon of brown sugar 

Stevia to taste

My Directions: 

Mix oats, sugar, cinnamon and melted butter. Place in pie tin and toast in oven at 375 for 6-12 min until crisp. Turn off heat and let sit in warm oven with door ajar.

Core and chop apples

Sautee in oil and butter until tender almost carmelized

Stir in cinnamon

 Stir in the toasted oats from the oven.

It is now ready to serve.

How To Make Juniper Berry Sourdough Starter

 

Utah Juniper Tree - Iron County, Utah



JUNIPER BERRY SOURDOUGH STARTER


​Take about a dozen juniper berries and make sure they have a glabrous (smooth, no hairs), the milky-white coating is yeast. If you rub on the berry you will see it is green underneath. 


Utah Juniper Tree  Berries -
Smooth with a milky white coating.



Put the juniper berries in a jar with a cup of flour and a cup of warm water and loosely cover. Let rest for a week on the kitchen counter.  After a week, remove the berries and add a cup of warm milk and another cup of flour. Stir and let set for a day or two. You now have a great sourdough start.  Store your start in the refrigerator and add to it after use.


Use the juniper berry sourdough starter with your favorite sourdough recipe.

Teriyaki Beef Jerky Recipe

 

Teriyaki Beef Jerky 



London Broil sliced thin, soaked overnight in a scrumptious Teriyake marinade then dried in a dehydrator or oven are the makings of the best jerky I ever ate. It is hard not to eat up the slices of meat before it is dried. Here is the recipe.


2 lbs of lean red meat ( I used London Broil )

Marinade Ingredients

1/4 cup of brown sugar

1/2 cup of soy sauce

1 Tablespoon of minced fresh ginger

2 cloves of garlic crushed

1/2 teaspoon of freshly ground pepper

1 Tablespoon of salt 


 1. Mix the marinade ingredients


2. Slice the meat 

Cut the meat into 1/4 slices



Teriyaki Beef Jerky- Slice the meat



3.  Add the meat slices to the marinade a few slices at a time and coat Put into a container with a lid and pour any remaining marinade  over the meat. Cover and refrigerate overnight or 8 hours. 




Teriyaki Beef Jerky in dehydrator. 



4. After it has marinated for 8 hours drain and dry in a 140 degree oven for 6-8 hours. You can also lay on racks of a dehydrator at 140 for 6-8 hours. I use an Excaliber dehydrator. 


Store Teriyaki Beef Jerky in Mason Jars 


I stored the jerky in the refrigerator inside covered Mason jars.

Waffles In An Iron Grill Pan

If you do not have a waffle maker you can use a cast iron grill pan.

I never thought of waffles much.  Suddenly out of the blue I had a craving for waffles! All I had was an cast iron grill pan to make them. They were good and came out looking like hands with long fingers. You got to flip them like pancakes and it took a few practice waffles to figure out how to lift them from the narrow grill channels. I will be buying a Belgium iron waffle maker to get those nice deep wells for cream cheese and honey.


1 duck egg 1 hen egg and two pretend eggs.


 The waffle batter was a basic recipe. Instead of using the 2 tablespoons of sugar (some recipes use 3 Tablespoons sugar), I used  1/8 teaspoon pure stevia (no additives) instead of sugar. I also used evaporated milk instead of regular milk. I have 1 duck and 1 Americana laying eggs right now so I had enough eggs for this recipe.

The batter was a bit thin so I would reduce the amount of milk from 1 2/3 cups to 1 1/2 cups. Most recipes call for 1 1/2 cups. 


The waffles came out looking
 like hands with long fingers



Basic Waffle Batter Recipe


Mix dry and wet ingredients separately


Mix Dry ingredients :

2 cups all purpose flour

2-3 Tablespoons of sugar or 1/8 teaspoon of pure stevia

1/2 teaspoon of salt. 

1 Tablespoon of baking powder

Set dry aside



Mix wet ingredients:

2 eggs 

1 2/3 cups milk (I used evaporated) Next time I would 1 1/2 cups.)

1 teaspoon of vanilla

1 teaspoon of maple extract (optional)

1/3 cup of vegetable oil


Combine the wet with the dry:


Get the grill pan hot and then brush with oil

spoon the batter onto the grill. 

This next part you are just going to have to experiment. It is a bit hard to lift it off the pan with that batter in the narrow grills. 

I found by my 3rd one I had found my method. I used a butter knife to loosen each grill channel on the edge and used a metal spatula to flip it. 



Iron Grill Pan Waffles with berries


I heated some frozen fresh berries for 15 minutes at 350 degrees and served them with the waffles. 


You can store the batter up to 2 days in the fridge or make all the waffles and store in your freezer, then toast them. 


You can also make these like pancakes on a flat pan. Waffles have more oil than pancakes so they will have a crispiness on the outside.

Best Oven Cleaner I Ever Made

 

Here is the recipe. 



You can make your own oven cleaner. And you can use it to clean your tub, those slippery greasy silicon baking mats, and more! It is safe because it is only dish soap, vinegar, lemon juice and water. Don't be fooled by it's  simplicity, this stuff works. I am going to give you the recipe. But first take a look at this.

Best Oven Cleaner I ever Made





BEST OVEN CLEANER I EVER MADE
RECIPE

Mix together in a spray bottle:
  • 1/4 Cup of dish soap ( I used Dawn dish soap)
  • 1 Cup of vinegar ( white or apple cider)
  • 1 Cup of lemon juice
  • 1 1.4 Cup of water. 

  1. Spray this concoction on 
  2. wait 20 minutes ( I waited over night)
  3. If you do an overnighter, before you begin, spray lightly with water to moisten
  4. then wipe. Most of the grime and browned area wipes off. 
  5. Caked on stubborn spots come off easily with a steel pad.  Just test your oven in a small area to see if it scratches. Mine did not scratch.

That is all. When I went looking for a commercial oven cleaner to buy in town, there were none to be found. I ran across this recipe and tried it out. This will be my general and heavy duty cleaner from now on.

Eggplant As Bread Sandwich




Cut 2 slices of eggplant 3/4" thick. Brush with oil and grill in skillet.

This sandwich I made with mozarella, fresh red pepper, and baby spinach. I slathered on some mayo and eggplant dip too. Next time I will put a bit of eggplant dip on the side instead. Get ready to lick your fingers after each bite. This is messy but oh so good !

Delicious Keto Hamburger Buns


Delicious keto burger buns recipe
Just made these and they are so good !
All you need is Mozarella cheese, cream cheese, eggs, almond flour, baking powder, salt, and optional sesame seeds and parsly. Use parchment paper or a silicone mat for baking. Oh and melted butter to brush on the top.

This went together really fast. While melting the cheeses I was leary. I wondered how mixture was going to turn into bread.
Turn ove on at 400 degrees F

Melt until gooey

  • 2 c. 

    shredded mozzarella

  • 4 oz. 

    cream cheese

  • Add in and combine
  • 3 

    large eggs

  • 3 c. 

    almond flour

  • 2 tsp. 

    baking powder

  • 1 tsp. 

    kosher salt

  • Knead the dough a few times
  • Then divide into 6 
  • Place on parchment paper or a silicone mat.
  • Brush tops with
  • 4 Tbsp. 

    butter, melted

  • Bake for 10-12 minutes

  • Add 2 minutes for a golden brown finish.

  • Optional

  • Sprinkle on 

  • Sesame seeds 

  • Dried parsley

Keto burger bun recipe dough is 
Once the eggs and almond flour was added I scooped up 6 handfuls and plopped them down on the pan. The butter is for brushing on the top before baking
Bake 10-12 minutes adding 2 minutes for a golden brown finish. Your times will vary.
Here is what I got.

Keto Burger Buns.



These buns smelled like cheese bread
and tasted like cheese bread. The texture was perfect. They held together under the big strong hands of my husband. He really loved his hamburger.


These buns were light and fluffy
yet sturdyenough to hold together.

Pioneer Boulangerie Lemon Cake


My Mother loved lemon desserts so I found this recipe to make for her birthday. I quickly chose this recipe because it sounded so good and this lemon cake is not only good it is scrumptious ! And 30 years later we are still making it and giving away the recipe. The picture above was taken by my daughter after she herself made this Pioneer Boulangerie Lemon Cake.

 I found that the Pioneer Boulangerie is a world-renowned French cafe.  So here you go lemon lovers. This is easy and fun to make.  Bon Appetit !



PIONEER BOULANGERIE LEMON CAKE 


1 (1 lb. 2.5 oz.) pkg. yellow cake mix
1 (3 3/4 oz.) pkg. instant lemon pudding mix
4 eggs
3/4 c. oil
3/4 c. water


Lemon Icing


Combine yellow cake and lemon pudding mixes with eggs, oil and water and mix well 2 to 3 minutes with mixer. Turn into ungreased 13 x 9-inch baking pan and bake at 350 degrees for 30 to 35 minutes or until cake springs back when lightly touched. Remove from oven. While warm, pierce surface of cake with tines of fork or poke with a straw and pour lemon icing ( recipe below) evenly over cake. Makes 12 to 15 servings.



LEMON ICING


1 (1 lb.) box powdered sugar
2/3 c. lemon juice
2 tbsp. melted butter
2 tbsp. water



Combine powdered sugar, lemon juice, butter and water and beat with mixer until smooth. After poking holes, pour over cake while still warm.

Garden Pizza-Like Zucchini

Here is a great idea for those big zucchini you get from your garden. Use the ones that are still fleshy inside and the seeds are still tender. We are going to make Pizza ! This is the kind of pizza you will eat with a fork. 





This zucchini was 4" in diameter.


1. Cut 1/4 " slices. ( For me 6 slices fit my baking sheet) My slices were 4" in diameter.

2. Oil the slices and lay on a foil lined baking sheet.

3. Set foil lined baking sheet with oiled zucchini slices in oven 6" under broiler and broil for 2-4 minutes on each side (I am at 6,000 ft elev. so it took 4 minutes) begin watching at 2 minutes.

Take out and cool. You can eat them like this. Add some salt and pepper yum* or...

4. Next put a spoonful of spaghetti sauce on each one ( I cut up some canned Italian stewed tomatoes .)

5. Put a slice of mozzarella cheese to fit on top of each slice. ( I only had Colby) 

6. Broil 2-4 minutes. start watching those at 2 minutes and remove when just beginning to brown. 

Take out of the oven and cool on a rack for 5 minutes. They are very good. 



Garden Pizza-Like Zucchini

Use a spatula to carefully remove from the baking sheet and place on a plate and enjoy. 

Just think of the toppings you can put on this. What comes to mind is a thin slice of homegrown tomato, genoa salami, and a slice of cheese. What about bacon and bleu cheese ? Many possibilities.

The Spaghetti Squash Gift and Recipe

The spaghetti squash gift. 


I love spaghetti squash. Below this recipe is my true story of how I got this homegrown squash. 
  1. Preheat oven to 375
  2. Lightly oil a baking sheet
  3. Cut squash in half from stem to blossom end (lengthwise) and soup out seeds and pulp
  4.  Drizzle with olive oil and season with salt and pepper 
  5. Place cut side down on the prepared baking dish
  6. Bake for 35-50 minutes ovens temps vary. I do 50 minutes because I am high in altitude. Honey is good drizzled over the top if desired. 

MY SPAGHETTI SQUASH STORY


Spaghetti squash grows really well in our clay soil. Each plant grew  6-7 nice yellow/lime green spaghetti squashes. Last year the squash bug got my crop of pumpkins so I opted not to grow any kind of squash this year. While shopping at a local nursery in late spring, I was attracted to a beautiful banana squash plant  in a small pot. I bought it and planted it out back away from the garden hoping the squash bug would not see it. The squash bugs came anyway and I had to pick them off one by one and also scrape off the eggs deposited on the backs of the leaves and stems. To my surprise after 3 weeks of picking off the bugs, they stopped visiting. With the daily care I gave them and the nourishing monsoon rains, the plant flourished and began to form deep yellow buds. 

A week later I noticed a squash forming!  I had visions of baking the squash in warm oven on a chilly fall day. 
A few days later I happened to notice the baby squash was 
eaten by a lucky critter, probably a squirrel or a skunk. But I still had faith it would grow nicely in spite of the eaten squashes. 

Early October, before any more fruits developed, Jack Frost came and waved his frozen wand over all the plants here in Utah. The Squash plants withered and sunk into the earth. It would seem that all my inspired action had turned into failure. But,  I had crops frozen before so I took it in stride.

 I let it go. I still loved the idea of eating squash and still had the vision of baking it in the warm oven on a chilly fall day.

A few days after the frost my husband went to get hay for our llamas and brought me a spaghetti squash! Well, what do you know ! I was so delighted. I got my spaghetti squash in spite of my troubles. The man who sells us hay had shared his crop with us. 

A week later, we went to buy 4 more bales of hay for winter. The man said, " Go to the back of my truck and get yourself a few squashes" I went back to his truck bed and it was filled with beautifully formed spaghetti squashes. I chose two. So now I have 3 homegrown delicious spaghetti squashes! I was so grateful and delighted that in spite of my dilemma with the squash bugs, the hungry critters, and Jack Frost, I had gotten the squashes I desired. They seemed to come on the Great Conveyer Belt of Life !  
Woo hoo ! Thank you, universe !

As I sit in my kitchen writing this post, I am preheating my oven on a chilly fall day for delicious oven baked spaghetti squash. I have chills writing this because I can feel the magic in this process.

Never give up on your dream or desires. The gifts are revealed to you in ways our human minds cannot yet imagine. 

Try this recipe. You can scrape the flesh with a fork and it separates like spaghetti. Top it with spaghetti sauce and meatballs or your favorite  veggies or eat it with coconut oil or butter. 

Now I am going out to check on my bundled corn stalks and my scarecrow construction.

Easy Peel Eggs

Easy Peel Steamed Fresh Eggs


Did you know freshly laid farm eggs can be almost impossible to peel if you hard boil them?
Here is the solution.
Steam them instead.
note: ( your time may vary so test an egg by plunging it in cold water peel and open to see the yolk is done)
  1. Place one layer of eggs in an empty 4 quart saucepan till they are cozy. I was able to put in a dozen eggs.
  2. Fill the pan of eggs with 1" of water
  3. Bring to a soft boil then cover with a lid. Steam chicken eggs for 15 minutes and duck eggs for 17 minutes.
  4. Plunge into a bowl of cold water and ice cubes then peel.
I have found peeling immediately after steaming and plunging in ice water gives me the easiest peel.
